梨山高山烏龍茶 Lishan High Mountain Oolong Tea

 

 

茶 Tea species

此茶系位處極高,遠眺群山,孕育臺灣特有動植物無數,可謂生態、自然與茶共繁盛,獨具滋味。
梨山茶系一線,地處臺灣中部山區,山脈橫亙,錯落1800公尺至2500公尺,峰嶺綿延,此系為最,河川之源,茶香之幻,聞名世界。
Lishan tea production area specializes in Qingxin Oolong tea, producing hemispherical light and partially fermented tea.
temperatures of Lishan, harvesting only happens 2 to 3 times at the maximum, most of which is during spring, winter or autumn. Due to the cold temperature, its tea leaves are thicker, drastically increasing its infusion count.

 

品 Tasting

沖泡建議:先以熱水溫杯,取7公克茶葉置入150毫升評鑑杯中,100度沸水注之,首泡注水後立即倒出再溫杯一次,第二、第三、第四泡均70秒出湯,第五、第六泡90秒出湯,第七泡三分鐘;可視個人口感調整置茶量與出湯時間。
Warm the 150ml evaluation cup with some hot water first, then place around 7 grams of tea leaves into the cup and pour 100°C boiling water.
Pour away the tea after the first brew and warm the cup again. The second, third and fourth brew should last around 70 seconds before tasting, 90 seconds for the fifth and sixth and 3 minutes for the seventh; the amount of tea and duration of brewing can be adjusted based on personal preferences.

 

韻 Flavor

茶湯蜜綠水馥甜,滋味花果回甘芳。
The tea should look emerald-green, with tastes of flowers and fruits.

 

境 Environment

此茶系位處極高,遠眺群山,孕育臺灣特有動植物無數,可謂生態、自然與茶共繁盛,獨具滋味。
Lishan tea is produced in a band of area on the mountains at around 1800 to 2500 meters above sea level in Taichung Taiwan. Ideal for specialty tea that is more fragrant with a purer taste. Its condition makes production rare and is often sought by tea enthusiasts.

此茶系位處原始林區,山脈跌宕,錯落之間,特有生態多樣豐富,茶樹得天獨厚,取山林良土,覓得滋味萬千。杉林溪茶系多座於臺灣南投縣境內,處高冷原始林區,海拔約1400公尺或至1800公尺,得群山嘉木況味,熱轉花,冷蘭香,為不世出之珍品。
Shanlinxi tea are mostly situated within Nantou County, Taiwan, and majority is of Qingxin Oolong species which can be found in high cold primary forest area at around 1400 to 1800 meters above sea level.
Blessed with mountains filled with superb trees that influence flavors, the tea has hints of floral aroma when freshly brewed and smells like orchid when cooled, making it a true treasure out of this world.

韻 Flavor

茶湯明黃水蜜甜,滋味轉花回甘香。
The tea should be of a clear yellow color that tastes of Ginger Lily, and gradually turns floral in the aftertaste.

 

境 Environment

此茶系位處原始林區,山脈跌宕,錯落之間,特有生態多樣豐富,茶樹得天獨厚,取山林良土,覓得滋味萬千。
This tea is mostly found in cultivated Mengzong Bamboo Forest areas which has fertile soils. This area is an emerging high mountain tea area, and its tea has excellent market competitiveness. There in order to maintain soil fertility, tea farmers use organic fertilizers to fertilize the tea treas.
Shanlinxi tea has a mellow taste and a faint aroma that hints of bamboo and fir due to the surrounding fir trees that grow around tea leaves, which is a major feature of Shanlinxi tea.

紅玉,為臺灣野生山茶與緬甸大葉種紅茶交育半世紀而成之臺灣紅茶,湯色如紅寶,透似琥珀,有薄荷與肉桂之香,其香,世界獨一。
With the end of the Second World War, the government of the Republic of China established a tea industry improvement farm in Taiwan, after fifty years of continuous selection and breeding, a new black tea variety named Taiwan Tea No. 18 was finally cultivated in 1999: Hong-Yu. This is a black tea that can only be grown in Taiwan. It is a brand new breed and its official name is TTES No. 18.

 

品 Tasting

沖泡建議:先以熱水溫杯,取3公克茶葉置入150毫升評鑑杯中,90度熱水注之,首泡10秒出湯,其後第二泡20秒,第三、第四泡40秒,第五泡70秒,第六泡2分鐘,第七泡5分鐘,第八泡6分鐘;可視個人口感調整置茶量與出湯時間。
Brewing suggestion: first warm the cup with hot water, put 3 grams of tea leaves into a 250ml evaluation cup and fill it with 90°C hot water. The first brew should last for 10 seconds, then 20 seconds for the second, 40 seconds for the third and fourth, 70 seconds for the fifth, 2 minutes for the sixth, 5 minutes for the seventh and 6 minutes for the eighth; you may adjust the amount of tea and brewing time according to personal tastes.

 

韻 Flavor

肉桂銜薄荷,喉韻有蜜香,觀色如紅寶,獨有臺灣香。
The TTES No. 18 black tea has a high polyphenol content, after full fermentation, it is transformed into theaflavin and thearubi It exudes the aroma of mint and cinnamon and has a mellow taste.
When high-quality Taiwan Tea No. 18 black tea is served, it is slightly astringent at first but gradually turns honey sweet all the way to the aftertaste.
This charming aroma and taste can only be experienced from the native species of Taiwan camellia, and its uniqueness is why Taiwan's black tea can compete with other world-renowned black teas.

 

境 Environment

臺灣培育茶樹之技,頂尖;南投魚池土肥多霧,佳地,天選之境,成世界紅茶之頂峰。
In 1925, the colonial government of Taiwan - the Japanese introduced different varieties of large-leaf Assam black tea from India, and started trial cultivation in Yuchi ownship, Nantou County, in the central region of Taiwan, because it has the same origin as Sri Lanka's black tea – Assam province with a latitude of 23 degrees north.
The planting results found that there is a natural lake in Yuchi Township: Sun Moon Lake, and its nearby environment is similar to that of India, as such it yielded the best quality. The color of black tea is dark red, and the aroma is charming, excellent, elegant and rich. Since then, black tea from Yuchi Township has become the top commodity in the Japanese tea market, even offered as a tribute to the emporer then.
The Yuchi Township black tea Area is about 800 meters above sea level, its topography is unpredictable with a rich geographical environment that has ideal annual average temperature and stable humidity, making Yuchi Township the best place to grow one of the world's best black tea.
The tea area's subtle terroir differences determined the aroma of TTES No. 18 black tea, which outclasses other regions.
